Materials for 8 servings
• 1 pork, with a total weight of about 2-2½ kg
• Salt, freshly ground pepper
• 1/2 tsp. sweet peas, in powder form
• 1 tsp. aniseed, scorched
• 1 orange juice
• 1 tbl. soup honey thyme
• 100 ml pezyme
• 200 ml of red dry wine
• 100 ml of olive oil
Procedure
Preheat the oven to 180 ° C. Put the file in a pan and sprinkle with egg, anise and pepper. In a bowl, mix the orange juice, honey, petimez, wine, olive oil and 50 ml of water and pour the frame. Bake for about 1½ hours or until meat (see “secret” below). During baking, pour the pan with the pan regularly (about 5-6 times during baking). We move the frame to cutting wood. In a saucepan, add the liquor to a sauce, adding some mustard and, if necessary, some water with a cornflair. We accompany roasted potatoes and soda apples.
