Almond pie with orange

Materials

  • 1 large orange
  • 1 cup sugar
  • 3 eggs
  • 2½ cups whitened almonds
  • Or cup flour for all uses
  • 1 teaspoon sweet baking powder
  • powdered sugar for sprinkling


Procedure

Pierce the orange with a skewer in several parts and put it to boil in plenty of water for about 1 hour, until the skin is very soft. Strain it and leave it to cool.

Grind the almonds in the blender until they become almost like a powder. Preheat the oven to 180oC.

Beat the eggs with the sugar in the mixer until they turn white. Meanwhile, cut the orange in half and remove, if any, the stones. Mash it in a blender. Add the orange puree to the egg mixture as well as the flour, almond powder and baking powder. Beat to mix well.

Butter a pan with a diameter of 22cm. and cover the bottom and walls with non-stick baking paper. Pour in the mixture and bake in the oven for about 1 hour. Check if it was cooked by dipping the blade of a knife in the middle, if it comes out clean it is ready.

Allow to cool for 10 minutes and turn over on a serving platter. Peel off the non-stick baking paper and when it cools completely, sprinkle with icing sugar and serve. You can also garnish it with a sweet orange cut into thin strips, whipped cream, slices of fresh orange or with vanilla ice cream, orange or cream.
